I had been procrastinating for so many months about buying an Appe Patra/Vessel. Last week the little one went to a neighbor’s place and gorged on these. Ahem! As a child we savored on a sweet version of this Appe (Post coming soon) Finally last week the FIL said that he had Panniyarams at an upscale South Indian Specialty Restaurant in Mumbai and said that he loved them. Damn, now I had to buy the patra! On Sunday Mom, Me and My aunt met at my maternal grandparents’ home and we had to go shopping. It’s Diwali and it’s customary to buy something for the kitchen! All of us had something to be ticked off the bucket list and Diwali is usually the time to do that. So coming back to the recipe, these are made with Idli/ Dosa Batter and I added some vegetables to them. You can make plain or vegetables of your choice or just a chopped onion and coriander should be good enough.
- 4 cups Dosa/Idli Batter
- One cup vegetables chopped (Spring Onion, Carrot, Capsicum, Cabbage)
- 1 tbsp Grated Ginger
- 1tbsp Chilli Paste
- Salt to taste
Mix the above and brush the appe vessel with oil. Scoop in the batter and cover on low flame. Once cooked, flip, cover and cook. Should be served with coconut chutney.the little one and I had them hot on its own.
