Gajar Halwa Recipe

Its winters and then my stomach automatically craves for gajar ka halwa/ Gajar no Halwo. I’ve been making this for the past 10 years or so. Same recipe and its bang on.  I can definitely say that this one is my own recipe, created after a lot of disasters. I clearly remember taking this for a potluck when I was in class 11 . All my friends went crazy and I was a happy person.  I still don’t get it why I did not choose a catering/hospitality course over commerce! This recipe takes efforts and time and it’s also not for the faint hearted.  The little one did not like the halwa and so the husband and I are making merry.  😀

  • Ghee-1/4 cup
  • Carrots-1 kilo- Grated
  • Milk- 600 ml
  • Sugar-250 grams
  • Cardamom Powder-1 tsp
  • Khoya-250 grams

In a thick bottomed kadhai heat ghee and add the grated carrots and sauté for two mins. Add milk and let this come to a boil. Simmer until the milk is reduced, stirring occasionally. Now add the sugar, khoya, and cardamom powder. Now is your test. Stir continuously for about ½ hour until all of this becomes a thick mass. Switch off and garnish with pistachios, almonds, and edible silver. Serve hot with a scoop of Vanilla ice cream and your party is a success.
