Ghee Cake Recipe

By now I think you all know my love for Cochin Bakery. They have a classic cake called the ghee cake and a friend had posted on her wall her version of this that she baked at home. This, however, was my version and it was good; not as good as the I always bring back a pk when I come back to Pune from Calicut and is our family favorite. I especially loved the slices on the sides as they were the brownest.

Flour-100 grams
Ghee-60 grams
Egg-1
Malai/Cream- 50 grams
Baking Powder-1/2 tsp
Caster Sugar-90 grams

Method of Making Ghee Cake

Line a loaf tin with parchment paper. Reserve. Beat the Cream, Sugar, and Ghee for 3-4 minutes till its light and fluffy. Add the egg and beat again till well incorporated. Sieve the Flour and baking Powder in this mixture and mix well. Pour into the cake tin and bake at 150 degrees in an OTG or till a skewer comes out clean.
