Carrot Pickle and my First Post of 2017

This is my first post in the year 2017 and it’s already 5th, I wanted to post some content or recipe on 1st itself but I was too preoccupied sleeping after staying up all night on 31st. I am not really a resolutions person, however, this year I’ve set targets for myself,  I’ve new dreams, more clear ones and I know I’m going to make it happen.  And to all my readers( i know there aren’t many) but whoever is reading this and-and if you are scared to go out of your comfort zone or if something is holding you back, figure it out and work on it, that’s the only way. Never easy and also so nerve wrenching, but I read somewhere ” if it doesn’t scare you, it isn’t worth it ”

Carrot pickle is easy and instant and can be made in half hour. I learned this from my mom and she learned this from my dad’s elder sister who lives in Gujarat who is again quite the beast when it comes to cooking. This pickle is made from Winter Carrots, however, if you do not access to these you can make do with regular carrots.  You can use the same recipe for making Shalgam or Turnip and even Mooli or Radish Pickle. I have a long list to make pickles and I’m juggling between handling a home, Toddler and my new-found passion for blogging. New Year was good with one of my reader talking to me about her doubts while making the Sweet Lemon Pickle.  It makes me immensely happy to see that I’m at the right path doing what I love.

Ingredients for Carrot Pickle

Carrot Cut Lenghthwise-250 grams

Salt-60 Grams

Red Chilli Powder-30 grams

Pickle Masala-100 grams


Mustard Seeds- To Temper

Whole Cumin- To Temper

Lemon Juice-5 tbsp

Method / Gajar Ka Achar Banane ki Vidhi ( Tacky, I Know)

In a bowl mix Carrot, Pickle Masala, Red Chilli Powder, Salt and Lemon Juice. Heat Oil and add Mustard Seeds. Once they splutter, add the whole Cumin and switch off the flame. Let cool for 10 minutes and mix in the achar. Relish Instantly with Paratha or Dal Chawal.
