Peanut or Groundnuts are a widely used in some parts of Maharashtra. Its an everyday ingredient in dry sabzis, gravy, and chutneys, Dry Peanut Chutney is a regular condiment and I am guilty of using store bought, I make a ridiculously easy and tangy dip using the dry peanut chutney. For now, let’s move to the Peanut Chutney. I learned this from my neighbor friend and made some variations of my own. She sends it to me with a Bhakri/ Flatbread made with Plantain Flour. Divine !
Chilli-2, the spicy one
Coriander- 1/3 cup
Salt- To Taste
Whole Cumin and Mustard- A few
In a pan add a tsp of oil and add the Peanuts, Shallots, Chili, Garlic and Curry Leaves. Roast for 2-3 minutes . Transfer to a grinder and add the Coriander and Salt and grind. Temper with Cumin and Mustard. Serve with Rawa Idli or normal Idli, Dosa.
