Vattayam or Kallapam/ Sweet Steamed Rice Cake
This is a steamed rice cake that’s made usually by the Kerala Christians, I always got my share from Cochin Bakery in Calicut along with other goodies like the celebration cake and veg roll. Christmas for me is raiding Cochin Bakery. With their Plum Cake, Celebration Cake and Acchapam. This recipe is from my friend Neeraja’s Blog Otturuli. She fermented it the whole night and then added Cooking Soda. My method was slightly different. It’s also Kallapam back in Kerala because of the use of Toddy that’s used for Fermentation. Vellapam and Kallapam have almost the same batter however Kallapam is sweeter and is steamed like a cake. A friend said that it’s eaten with Beef or Chicken Curry.
I’ve always had it on its own and here is my version.
Raw Rice or Idli Rice-1 cup
Cooked Rice-1/2 cup
Salt- To Taste
Instant Yeast- 1/8th tsp
Soak Raw Rice for 4 hours. Grind it along with all other ingredients including yeast and let this sit until double in size. If you want to make it for breakfast, grind and leave in the fridge in a big bowl. I used Saf -Instant Yeast which my friend sent from Saudi. Any Indian good quality yeast will do.
Grease a 9-inch cake tin, grease it and pour the batter. Cover with a cloth and steam in a steamer for 20 minutes on low flame.
